PENGARUH MEDIA EDUKASI TERHADAP PENGETAHUAN PROSEDUR PENYIMPANAN BAHAN MAKANAN DAN KUALITAS MAKANAN PADA KARYAWAN KATERING INDUSTRI

Background: One of the causes that arise due to food contamination, especially in food service, is food
poisoning. BPOM data in 2022 showed that there were 72 cases of extraordinary events (KLB) of food
poisoning in Indonesia, which increased by 44% compared to the previous year of 50 cases. Knowledge
of food organization employees is an influential factor in food poisoning. Objective: The purpose of this
study was to determine the effect of nutrition education media on the knowledge of catering employees
about food storage procedures and food quality. Methods: Quasi experimental design and pre-test
post-test design were the methods used in this study. Sampling using purposive sampling. The sample
technique was determined by census with a total of 30 respondents divided into three groups. The
inclusion criteria are employees or food warehouse staff in industrial catering who can participate in
research activities until completion. Data on food storage procedures and food quality on brochure and
video media were analyzed using the paired sample t-test, while food quality data on wall decoration
media were analyzed using the Wilcoxon test. Results: There is an increase in knowledge in food
storage warehouse employees before and after being given educational media brochures (p=0.000),

videos (p=0.000), and wall hangings (p=0.002). The media provided contains interesting animations,
making respondents interested and easier to understand the material provided. Conclusion: There is an
effect of providing educational media on knowledge of food storage procedures and knowledge of food
quality in employees in industrial catering. The most influential media is brochure.
